Meatloaf with Chive Mashed Potatoes

 

8 oz uncooked lean ground beef (with 7% fat)

12 oz lean ground turkey

1 medium onion(s), chopped

1/2 cup uncooked old fashioned oats

8 oz canned tomato sauce

2 Tbsp Worcestershire sauce

1 Tbsp hot pepper sauce

2 large egg white(s), beaten slightly

1/4 tsp table salt

1/4 tsp black pepper

4 large potato(es)

1/4 cup fat-free skim milk

1/4 cup plain fat-free yogurt

1/4 cup reduced-fat sour cream

1 Tbsp chives, minced

1/8 tsp table salt, or to taste

1/8 tsp black pepper, or to taste

 

Preheat oven to 350°F. Spray loaf pan with cooking spray. Combine beef, turkey, onion and oats in a large bowl. Mix together tomato sauce, Worcestershire sauce, hot pepper sauce, egg whites, salt and pepper. Add to meat mixture and mix well with hands. Press into pan and bake for 60 to 70 minutes. (Note: Add an extra egg white if meatloaf does not hold together properly.)

 

Peel potatoes and cut into large chunks. Cover with salted water and bring to the boil. Cook until tender when pierced by a knife. Remove from heat and drain.

 

Mash potatoes. Combine with milk, yogurt, sour cream and chives. Season to taste with salt and pepper. Do not overbeat or potatoes will become gummy.

Meatloaf Muffins

Yield: 12 servings; 2 points per serving

 

1 lb ground turkey or ground beef

1 pkg Stove Top Stuffing Mix, any flavor

1 medium onion,chopped

1/2 c green bell pepper chopped fine

1 t garlic powder

2 egg whites or ¼ c. egg beaters

1 c hot water

1 pk onion soup mix

1/4 c Ketchup

 

Mix stove top and water in a large bowl, stir with fork until moistened.

 

In another bowl, combine all remaining ingredients. Add stuffing to mixture. Fill sprayed muffin tins almost to the top with mixture. Bake at 350 for 30-35 minutes.

Slow Cooker Meat Loaf

Yield: 8 servings; 4 points per serving

 

24 ounces extra lean ground turkey or beef

1 cup finely chopped onion

4 slices reduced-calorie white bread, torn into small pieces

2 teaspoons prepared yellow mustard

1 tablespoon pourable Splenda or Sugar Twin

1 teaspoon dried parsley flakes

1 cup (one 8-ounce can) Hunt's Tomato Sauce

 

Spray a slow cooker container with butter-flavored cooking spray. In large bowl, combine meat, onion, bread pieces, mustard, and 1/2 cup tomato sauce. Mix well to combine. Form into a large ball. Place in prepared slow cooker container. Stir Splenda and parsley flakes into remaining 1/2 cup tomato sauce and spoon mixture evenly over meat loaf. Cover and cook on LOW for 6 to 8hours. Divide into 8 servings. When serving, evenly spoon sauce over top.

 

Freezes well.
