Hot Fudge Crockpot Cake
Yield: 15 servings; 4 points per serving
3 c. skim milk
1 box sugar free cook and serve chocolate pudding
1 box Super Moist chocolate fudge cake mix
1 1/3 c. water
1/2 c. applesauce
6 egg whites
Spray a crockpot container with nonfat cooking spray. Whisk skim milk with dry pudding mix in crockpot until dissolved. In a medium bowl, mix dry cake mix, water, applesauce and egg whites with whisk for two minutes until blended. Very gently pour cake mixture over pudding mixture. DO NOT MIX! Cover and cook on HIGH for 2 1/2 hours. Serve hot.

Barbo's Crockpot Spicy Apple Dessert
Yield: 6 servings; 1 point per serving
6 large Gala apples peeled, cored, sliced or coarsely chopped
1 c. Splenda (I use 1/4 cup and it's plenty)
2 teaspoons cinnamon
1 T sf/ff butterscotch pudding mix (vanilla is also good)
1/2 teaspoon salt
2 tablespoons lemon juice
2 tbs. vanilla
1 cup boiling water
Mix sliced apples with sugar, cinnamon, salt and butterscotch pudding mix until evenly coated. Put mixture in crockpot. Pour lemon juice over apples and THEN add boiling water. Cook on high for about an hour.

Apple Crisp for the Crockpot
Yield: 4 servings; 3 points per serving
4 cups sliced Granny Smith Apples
1 Tbsp all-purpose flour
1/3 cup Splenda
1/2 tsp. cinnamon
1/2 cup fat free Caramel Ice Cream Topping
1/3 cup all-purpose flour
1/2 cup quick cooking oats
2 Tbsp. Parkay Light Margarine
Spray crockpot with cooking spray. Combine apples with 1 Tbsp. flour, Splenda, & cinnamon in crockpot. Drizzle ice cream topping over the apples.
Combine remaining ingredients in a small bowl with fork or pastry cutter and sprinkle over apple mixture.
Cover and cook on HIGH for 2 1/2 to 3 hours or until apples are tender.
