Individual Pear Upside Down Cake
Nonstick cooking spray
2 Tablespoons sugar free strawberry preserves
1 pear, halved, corred and thinly sliced
1/4 Cup cake flour
1 1/2 Tablespoons Splenda
3 egg whites
1/4 Teaspoon cream of tartar
1/2 teaspoon vanilla
Lightly spray 2 microwavable oversized (12 oz) coffee cups with cooking spray. Place 1 Tablespoon stawberry preserves in each cup. Layer pear slices over preserves. Set aside.
Sift flour and 1 Tablespoon Splenda together in mixing bowl; set aside.
Beat egg whites until foamy. Add cream of tartar and continue beating until almost stiff. Gradually add remaining 1/2 tablespoon Splenda. Mix on high for 1 minute. Fold in vanilla, then flour-Splenda mixture. Pour batter into coffee cups. Place cups in microwave and cook on HIGH for 3 minutes.
Turn out onto dessert plate. Serve hot or cold. 2 points.

Single Serve Desserts
For those of us who can’t handle the temptation of a full-sized dessert!
- Single Serve Haystack Cookies: To make a single cookie, use 1/8 c Fiber One and 20 chocolate chips – or substitute any other flavor) Put it all in a Dixie or custard cup, microwave until the chocolate softens, stir and drop onto waxed paper. Let stand until hardened or refrigerate. 1 cookie, 1 point.
- Small cakes: Use 2 parts cake mix (without pudding) to 1 part soda pop. Most cake mixes have approximately 3 cups mix, and 1/4 cup is what they usually list as a serving on the NIs on the back. This makes one fairly large cupcake, either baked or microwaved. 1-1/2 cup mix and 1/2 can pop will make an 8x8 pan. It's helpful to keep yellow cake, white cake, and devils food in baggies or a canister to make quick desserts whenever you want to and in any size you want to.
- Cobblers: 2 parts cake mix to 1 part diet soda; sprinkle mix on top of fruit, drizzle pop on top, do NOT stir.
- Cupcakes: ¼ cup cake mix to 1/8 cup soda pop: makes 1 lg cupcake at 3-4 points each
- Small cupcake: 2 TBL cake mix to 1 TBL soda pop (or pumpkin, applesauce, or yogurt): 2 points each. Can be made in a dixie cup and microwaved.
- Single Serve Brownie: With a fork, mix together 4 tablespoons Betty Crocker LF dry Brownie mix and 2 tablespoons water . Microwave on high 1 minute. Cool and top with FF Cool Whip.
- Single Serve Pudding: 1 heaping TBL sf/ff pudding mix to ½ cup milk: 1 serving at 1.5 points.
- Single Better Than Sex Cake: In a Dixie cup, make 2 TBL Devils food cake mix, 1 TBL cola (or pumpkin, applesauce, or yogurt); Poke a few holes, and drizzle on a scant TBL caramel ice cream topping diluted with a little milk; add a few Heath bits or 4-5 chocolate chips; cool, top with FF cool whip. About 3.5 points
- Small Batch Chocolate Chip Cookies: ¼ cup RF Bisquick; 1 rounded Tbl ff sf pudding; 1/8 cup Splenda; 1 heaping TBL applesauce; 1/8 cup egg beaters; 1/8 cup choc chips (or other flavored chips). Makes 5 to 6 cookies.

NILLA Yogurt Freeze
2 Reduced Fat NILLA Wafers
2 Tbsp. thawed COOL WHIP LITE Whipped Topping
2 Tbsp. strawberry lowfat yogurt
PLACE 1 of the wafers on bottom of one paper-lined medium muffin cup; top with combined whipped topping and yogurt. COVER with remaining wafer.

Best Blueberry Dessert

3/4 cup blueberries
1 cinnamon graham cracker
2 tbsp Fat Free Cool Whip
Crush graham cracker in bowl. Add blueberries. Add cool whip. Mix slightly. Put in microwave for a few seconds, just until slightly warmed. Tastes JUST LIKE FRESH PIE!
Apple Crisp For One
1 serving @ 2pts
1 Medium Apple
1 Whole Reduced Fat Cinnamon Graham Cracker
1Tbs Splenda no calorie sweetener
a sprinkle of cinnamon to taste
Peel and slice the apple into small slices. Place into a microwave safe bowl. Sprinkle splenda and cinnamon on top.
Microwave on High for 2 - 3 minutes, or until apples start to cook.
Crunch graham cracker in a bowl until almost a powder. You can have more chunks if you like. Sprinkle over the apple mixture and microwave for another minute.

Big Breakfast Cookie
Yield: 1 Servings
5 Points for one big cookie, or you can make it into smaller cookies for less points.
1/3 c oatmeal
1 T raisins
1 T flour
1/3 c fat-free dry milk
1/4 c applesauce (no-sugar added)
1/4 t cinnamon
1/4 t baking powder
1 T Splenda
Preheat oven to 350 degrees. Spray a cookie sheet with Pam. Mix all ingredients together and spoon a large mound on cookie sheet. Bake for 15-20 min, until golden brown on edges.

Upside-Down Banana Cream Pie
Yield: 1 serving; 3 points per serving
1/2 cup sf-ff- vanilla pudding prepared w/skim milk
1/4 banana thinly sliced
2 TBSP ff Cool Whip
small handful of crushed 100 Calorie Honey Graham Crips - around 6-7 (1/4 pack)
Place pudding in small dish, then spread banana over it. Smooth cool whip over bananas, then top with crushed Cinnamon Graham snacks.

Miscellaneous Ideas
- I crumble up graham cracker cookie and use a 2 point pudding cup. Put fat free cool whip and you're done.
- Graham cracker crumbs from a cookie, Vanilla pudding, strawberries and cool whip all of maybe 4 points also.
- Sliced up apple, cinnamon, splenda, cook until soft with cool whip.
- One-point chocolate Vitamuffins I defrost one in the am. Cool whip with stawberries on top.
- Low point waffle with strawberries and cool whip. OR low point waffle toasted first and a low point ice cream like a samwhich.
- Baked rome apples. I make 6 at a time. Put cinamon and Black cherry soda on top . With splenda of course and cool whip.
