Roasted Sesame Pork
Yield: 4 servings; 4 points per 4 oz. serving
1 tablespoon reduced-sodium soy sauce
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon fresh ginger -- minced
1 clove garlic -- minced
1 pound pork tenderloin -- trimmed of fat
1 tablespoon sesame seeds
Preheat oven to 425. Spray a shallow roasting pan w/ nonstick spray.
Combine the soy sauce, honey, sesame oil, ginger and garlic in a large bowl. Pat pork dry w/ paper towels; add it to the soy mixture and turn to evenly coat.
Place the pork in the roasting pan; press in the sesame seeds. Roast until an instant-read thermometer inserted into the thickest part of the pork registers 160, about 20-25 minutes.
Transfer the pork to a carving board and let stand 10 min before slicing.
