Crispy Oven Fish
Makes: 4 servings
1/4 cup MIRACLE WHIP Light Dressing
1 Tbsp. lemon juice
1 tsp. dried rosemary
1/2 tsp. coarse ground black pepper
4 orange roughy fillets (4 oz. each)
1 env. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
MIX dressing, lemon juice and seasonings until well blended.
SPREAD dressing mixture evenly onto both sides of fish, then coat both sides evenly with coating mix. Discard any remaining coating mix. Place in single layer in greased shallow baking pan.
BAKE at 375°F for 12 to 15 minutes or until fish flakes easily with fork.

Crispy Parmesan Orange Roughy
Yield: 4 servings; 4 points per serving
2/3 cup whole wheat bread crumbs
1/4 cup Parmesan cheese
1/2 teaspoon paprika
4 6-ounce orange roughy fillets
1/4 cup skim milk
Preheat oven to 450° F. Coat a baking sheet with nonstick spray.
Mix first 4 ingredients together in a shallow dish. Dip fillets into milk, then coat them with crumb mixture.
Place fillets on the prepared baking sheet, and bake for 8-10 minutes, or until coating is browned and fish flakes easily with a fork.

Grilled Spicy Fish
Yield: 4 servings; 5 points per serving
4 red snapper or orange roughy fillets (6 ounces each)
1 tblsp olive oil
2 tsps paprika
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
1/4 tsp white pepper
1/4 tsp each dried oregano, basil and thyme
Brush fish with oil. In a small bowl, combine the seasonings; sprinkle over fish and press into both sides. Cover and refrigerate for 30-60 minutes.
Coat grill rack with nonstick cooking spray before starting the grill. Grill filets uncovered, over medium heat for 3-4 minutes on each side or until fish flakes easily with a fork.
One serving (1 fillet) equals 154 calories, 5 g fat, 34 mg cholesterol, 694 mg sodium, 1 g carbohydrate, trace fiber, 25 g protein.
