Fat-free ricotta cheese

  • I like it this way....lightly toast a slice of bread. Spread with the ricotta & sprinkle with Splenda & Cinnamon. Place under broiler for a minute or two. I use my toaster oven. Eat it warm and it tastes just like a cheese danish. Great for breakfast and if you use the light bread, 2 slices is only 1 point. Then figure on the TBL. of ricotta you put on. So good!!!

 

  • I use ricotta to make a pita pizza. You can bake the pita first to crisp it up and than add the ricotta & mozzarella cheese. I usually mix a little garlic powder, oregano, basil and pepper into the ricotta first also. Add any veggies u like also. Spinach & mushrooms are a really good combo w/ this.

 

  • If you have Whole Foods, go NOW! They carry Calabro, which is the best I've found. I think it tastes very close to the part-skim ricotta I used to eat and still LOVE. Calabro rules!

 

  • I really like mixing FF Ricotta with FF shredded mozzarella and then adding it to pasta. Yum!

 

  • Boil 1 lb whole wheat pasta and drain it. Save like a cup of that water put the pasta back in the pot and then add the ricotta and water mix it up and serve it. I think a serving comes to like 2 or 3 points... my family loves it... add parmesan cheese but count the points.

 

  • Drizzle some honey or maple syrup on top and sprinkle with a few walnuts for dessert

 

  • I actually use a little ricotta in with some pasta and grilled chicken. Kind of a knock off alfredo

 

  • Take a small tub of ricotta, a box of SF pistachio pudding, a cup of milk, and mix all together with a hand mixer, then fold in up to 1/2 tub (1 C.) FF cool whip. Oh yeah. It's yummmmy. And high in calcium.

 

  • My favorite way to eat it is w/mandarin oranges, walnuts, & a splash of french vanilla SF syrup.

 

  • I do it the lazy way. I beat the riccotta with some eggs, basil, oregano and whaterver other cheeses I have and just layer it with some whatever pasta all mixed with sauce. Lots of fresh basil and tomatoes. Some cheese on top. Stick it in the micro till bubbly.

 

  • Last night I made a yum dessert, I took a spoonful of ricotta, a spoonful of pumpkin (canned) and a splenda packet, Pumpkin Pie spice. mixed together and then broke a graham cracker (pts) on top, it was a good dessert, tasted like pumpkin pie.

 

  • I use it for tons! I put it in a reduced calorie recipe for Spinach triangles. (Kind of like Greek Spanikopita) I put some on top of an english muffin with some light mozzarella and sliced tomato to make mini pizzas. I stir splenda into it and use it for fruit dip. You can use it any recipe that calls for cottage cheese, especially if you don't like the chunky texture of the cottage cheese.
