Parmesan Baked Cod
2 cod fillets (about 6 oz each)
2 Tblsp each corn meal and flour
1/4 tsp onion powder
1/4 tsp salt
1/8 tsp pepper OR lemon pepper
1 1/2 Tblsp light margarine
2 Tblsp grated Parmesan
Preheat oven to 450 degrees.
Combine flour, cornmeal, onion powder, salt, and pepper. Melt margarine and pour into bottom of small baking dish. Dredge cod in flour mixture. Place in dish. Turn once to coat with margarine. Sprinkle 1 Tblsp Parmesan cheese on each fillet. Bake at 450 degrees until cod flakes when tested with fork (about 10-15 minutes).

Baked Fish
Yield: 4 servings; 3 points per serving
1 packet shake n bake extra crispy
1 pound uncooked cod, about 4 quarter lb. fillets
1/4 cup Non-Fat Miracle Whip
Preheat oven to 400 degrees. Put 1 packet of shake n bake onto a large plate. Spread tops of fish fillets evenly with half of the Miracle Whip; press, dressing-sides down, into coating mix on plate. Repeat with other sides of fish and place on sprayed broiler pan.
Bake fish 15 minutes or til fish flakes easily with fork.

Tuscan Cod
1 t olive oil
1/2 c thinly sliced onions
1/2 c diced red pepper
1 clove garlic, minced
1 c chopped tomato
1 T capers
1/4 t ground cumin
1/8 t red pepper flakes
2 (6 oz) cod fillets
Heat oil in large nonstick skillet over medium-high heat. Add onion, bell pepper and garlic; saute 2 minutes. Add tomato, capers, cumin & pepper flakes.
Add fish to skillet, spooning sauce over fish. Cover and cook 10 - 15 minutes or until fish flakes easily when tested with fork.
Yield: 2 servings (fiber: 2.7 g. calories: 214 fat: 4 g)
No Guilt Fish and Chips
4 Points per serving
2 large baking potatoes, scrubbed and cut lengthwise into 16 spears each
3 tb Old Bay, divided
1/2 c. yellow cornmeal
4 (4 oz) cod fillets
Preheat oven to 425. Spray potatoes with nonstick spray. Place in large zip-close plastic bag w/ 1 tb Old Bay. Seal bag and shake to coat. Transfer to large baking sheet.
In plastic bag, combine cornmeal and remaining 2 tb Old Bay; shake to mix. Spray the fish fillets with nonstick spray and place in bag; shake to coat. Place in single layer on baking sheet. Bake until fish is golden brown and fork-tender, about 25 minutes.
1 serving is 1 fillet and 8 chips.
Depending on size of baking sheet, you may need to use 2. If so, switch baking sheets' placement 1/2 way through baking time.

Sicilian Cod
Yield: 6 servings; 5 points per serving''''
3 3/4 teaspoons olive oil - divided
4 1/2 cups sliced onion
3/4 cup red bell pepper strips
3 tablespoons golden raisins
3 tablespoons balsamic vinegar
3 teaspoons brown sugar
3/8 teaspoon salt
1/8 teaspoon pepper
6 (6-ounce) cod fillets
Olive oil-flavored cooking spray - to coat baking dish
1 1/2 tablespoons Italian-seasoned breadcrumbs
1/8 teaspoon salt
Preheat oven to 450° F.
Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add onion and the next 6 ingredients (onion through pepper). Cover and cook 10 minutes or until onion is wilted, stirring occasionally. Set aside; keep warm.
Place fillets in a shallow baking dish coated with cooking spray. Brush fillets with 1/2 teaspoon oil; sprinkle with breadcrumbs and 1/8 teaspoon salt.
Bake at 450° F. for 12 minutes or until fish flakes easily when tested with a fork. Serve the onion mixture with fish.
